5-MINUTE HEALTHY STRAWBERRY FROZEN YOGURT

INGREDIENTS:

4 cups frozen strawberries
3 Tablespoons agave nectar or honey
1/2 cup plain yogurt (non-fat or full fat)
1 Tablespoon fresh lemon juice

DIRECTIONS:

Add the frozen strawberries, agave nectar (or honey), yogurt and lemon juice to the bowl of a food processor. Process until creamy, about 5 minutes.

Serve the frozen yogurt immediately or transfer it to an airtight container and store it in the freezer for up to 1 month.

Kelly’s Notes:
I prefer a more tart frozen yogurt, but you can add additional agave nectar or honey if you want a sweeter-tasting dessert.

Fresh strawberries can be used in place of frozen, however the fresh strawberries must be frozen solid.

Serves 1 1 slightly under-ripened banana, sliced 1 tablespoon honey or agave nectar Cinnamon Olive oil Lightly drizzle olive oil in a skillet over medium heat. Arrange banana slices in pan and cook for 1-2 minutes on each side. Meanwhile, whisk together agave nectar or honey and 1 tablespoon of water. Remove pan from heat and pour sweet mixture over banana. Allow to cool and sprinkle with cinnamon.

Text 5 May 1 note New Me Challenge: Day 3

Today was a bit of a recovery day from the Half yesterday. I woke up and my whole body was so stiff that I practically fell out of my bed. I had planned on working out this morning, but I decided to give myself a rest day so that my muscles could recover. However, a couple hours ago, I got restless and decided that maybe some exercise would help loosen my body up a bit, so I did a 35 minute elliptical workout. Nothing too hard, but it was a good workout with 4 minutes on high resistance, 4 minutes on low resistance with a quicker pace, repeat. 

For breakfast, I had Greek yogurt with granola and dark chocolate chips (one of my favorites), and I’m having a glass of skim milk with Muscle Milk powder mixed in now as a post-workout snack. For dinner, I’m thinking I’ll get a whole grain panini. 

I can actually feel myself starting to get back into the groove of working out again. I like it. :)
